Organic Berry Complex Nutty Powerballs

These quick and easily made bites of sweet delicious goodness, are the perfect snack or powerball powerhouse "pick me up" for any time of day. Enjoy!



1 + 1/2 cups of dates
1/2    cup dried apricots (or any combination of dried fruit)
1 + 1/4 cup of cashew nuts
1/4    cup hazelnuts
2       tablespoon cacao
1/2   tablespoon Organic Berry complex  or/and      1/2  tablespoon maca
big teaspoon of vanilla extract
splodge of beet juice or coconut oil (to get it to correct consistency, but you may not even need juice depending on your nuts/fruit ratio)

Pop everything into the whizzer, you may need to scrape the sides down a couple of times.
Either press into a cling-filmed tray or roll into bite size balls
Put into fridge to set for a couple of hours before cutting.

These will keep in a tub in the fridge for days

Healthy Cacao Chocolate Beanies recipe

Superfood Raw Cacao Black Beanies 

I've made these dairy & gluten free fudgey brownies dozens of times, I'm nearly always changing it up depending on what ingredients I've got to hand that particular day. You can even make them totally refined-sugar free too if need be.
I love to add some decadence just before serving and drizzle them with Elderberry Syrup from Neal's Yard Remedies.

I'm offering you a simple version here but be brave and get inventive as the possibilities are endless, however I've tried many beans and black beans always work best.
They'll sit in a tub in the fridge for up to five days (who knows, maybe longer but I've always scoffed them by day 5)

1 ½ cups Cooked black beans (aka turtle beans)
2 good tablespoons Raw cacao (could use dutch cocoa probably)
½ cup Oats
¼ cup Coconut oil (melted)
1/3 cup Honey (or maple syrup, agarve or coconut sugar)
handful of Nuts (hazelnuts are my fave)
½ tsp Gluten free baking powder
Vanilla extract (good dollop)
pinch of pink salt

Nuts, dried fruit or chocolate drops for popping on top.

Elderberry syrup for dressing



Whizz everything except the topping & dressing in a food processor, whizz until really quite smooth.
Spoon into molds, pop the topping on,
Bake at 180 for 16 mins.
Leave until cool before removing.
They may feel soft (but it'd be rude not to try one at this point)
Once refrigerated they'll really fudge up.
